I disagree with you on the DALLE book showing that AI art requires skill or creativity (at least not at the level of non-AI art or photography). To me, it seems more like you need a glossary of art terms and movements.

I think the best analogy for DALL-E or StableDiffusion is the synthesizer keyboard. Suddenly you can create huge amazing intricate sounds just by pressing a button! But people with a great ear for music were able to leverage synthesizers to create amazing new things, far beyond what an untalented button-presser might create.
I think we're seeing a new class of AI-enabled artists emerge, e.g. https://aiartists.org/
